Recipe 1: Grits
Quick Carolina Cheddar Grits/ yields 4 servings
2 Cups Water
2/3 Cups Quick Grits
1/2 Cup Heavy Cream
1/4 Cup Cheddar Cheese shredded
1 TBS Chicken Base
Salt and Pepper
Stir in chicken base to slightly boiling water,
whisk in grits and reduce heat to low and allow to cook 2-4 minutes stirring constantly
add the heavy cream and stir well
add cheddar cheese and stir
salt and pepper to taste
Remove from heat and set aside for serving
Recipe 2: Carolina Shrimp and cream gravy
12 Medium Shrimp peeled and devained
1 1/2 Cups of Heavy Cream
1/4 Pound Smoked Sausage thinly sliced half moons
1/4 Pound Diced Red Pepper
1/4 Pound Chopped Green Onion
2 oz of white wine
1 OZ Olive Oil
1 TBS of fresh Lemon Juice
A Pinch of fresh Garlic minced
'' Parsley chopped
'' Cajun Seasoning
'' Smoked Chipotle
Add Olive oil to medium sized skillet and bring to a medium heat,
add sausage and allow to slightly brown stirring not stick
add shrimp, peppers, onions, garlic herbs and seasoning, Sautee for 3 minutes until shrimps start turning pink,
add lemon juice and white wine, reduce heat to low as sauce thickens adds cream and stir.
simmer on low for 3-5 minutes until sauce starts to thicken then pour the mixture over a bed of grits, pasta, or fresh bread and enjoy.
