Holiday Recipes: Homemade cheese enchiladas from Monica Garcia

Add a Mexican-dish twist to your next holiday gathering.

The holiday season is approaching and many are finalizing their plans for the next get together. And the top priority? The food.

For those needing some inspiration for the next holiday meal, Monica Garcia's homemade cheese enchiladas are a great choice.

If you want to add this dish to your dinner table, she gives us everything we need to cook them up in our kitchens.

Here's the full recipe:

Monica Garcia's homemade cheese enchiladas

10 dried Chile Colorado pods
5 dried Chile Ancho pods

The chiles are softened in boiling water and simmered for about 30 minutes.

Move to blender

After blending, strain the sauce to discard any extra seeds or pieces of skin that didn’t blend smoothly.

Taste and adjust the seasonings

1 teaspoon ground cumin
1 teaspoon ground garlic powder
1 teaspoon ground onion powder

Salt to your liking

The final step, and most important is to fry the sauce.

1 tablespoon all-purpose flour (to thicken sauce)

Fry corn or flour tortillas on a hot skillet for a few seconds in each side.

Dip tortilla in sauce, plate, add cheese and fold.
