Team 12's Charly Edsitty takes some time to share her family's blue corn pancake recipe.
Here's what you need to make your own perfect pancakes:
Ingredients:
2 cups ground blue corn meal (available in specialty stores and online)
1 cup flour
1 tsp. salt
1 tsp. baking powder
1 tbsp. shortening
2.5 cups milk
Directions:
Mix all dry ingredients together in a bowl and add shortening.
Using your hand, mix the dry ingredients with the shortening until incorporated.
Slowly add the milk and mix until a batter consistency is achieved.
Heat up a skillet on medium-high heat and coat with a non-stick spray.
Scoop about a 1/4 cup of the batter onto the heated skillet and spread into a circular shape.
Cook the pancake on each side -- about 2 to 3 minutes on each side -- until golden brown.
Top with butter, syrup and any fruit of your choice.
