Spaghetti Squash Bake

Directions to Bake Squash:

  1. cut squash in half (cut through the middle, do not cut length wise).
  2. Scrape out all seeds.
  3. Brush olive oil on inside and outside of squash. Repeat with salt and pepper
  4. Place squash face down on large baking sheet.
  5. Bake in oven for 40 to 60 min at 400 degrees
  6. Let cool and scrape out squash into bowl

Ingredients:

  • 9 oz spaghetti squash
  • I handful spinach
  • 1 tbs. garlic
  • 1/2 ladle marinara
  • 1 ounce shredded mozzarella
  • 1 ounce fresh mozzarella
  • garnish: shaved parm, salt + pepper, and parsley

Directions:

  1. Heat oil in sauté pan. Sauté spaghetti squash, spinach, garlic and marinara.
  2. Place marinara and spaghetti squash in lasagna pan. Top with shredded mozzarella and fresh mozzarella
  3. Bake in oven for 10-12 min at 400 degrees till cheese is golden crispy
  4. Garnish with shaved parmesan and parsley
