Jan's Bacon Egg Cups

Bacon and Egg Breakfast Cups

Ingredients:

Bacon

Eggs

Your choice of mini croissants, waffles, breakfast breads or bagels

(You will need 2 pieces of bacon, one egg and one piece of bread for each cup)

Directions:

Using a cookie cutter, cut out the breads or waffle to fit the bottoms of a cupcake pan or mini tart pans. Cook the bacon half way so it's still bendable.

Wrap the bacon around the bread and then set it into the cup.

Carefully crack an egg right in the middle of

all of your breakfast cups.

Bake at 350 degrees for about 15 minutes or until your eggs are cooked to desired doneness. Carefully lift them out….and place one or two on a plate.

Garnish with fresh herb like thyme sprig.
