INGREDIENTS:
- 8 ea Corn in the husk
- 1 cup Doritos crumbs (Food processor)
- 1 cup Flaming hot Cheetos crumbs (Food Processor)
- 1 cup Cotija Cheese (Grated)
- 1 cup Buffalo wing sauce
- ½ cup Salsa Verde
- 1 ea Fresnos
- ½ cup Chipotle Mayo
- ½ cup Mayo
- Garnish Cilantro, Chili powder and Tajin
Salsa Verde:
- 1 ea Poblano Chile (Chopped no seeds)
- 1 ea Jalapeno (chopped)
- 1 ea Cilantro bunch
- ½ ea Lime
- 2 tbsp Water
- Salt to taste
- Chipotle Mayo
- ½ cup Mayo
- 2 tsp Chipotle in Adobo juice
- ½ ea Lime
- Salt to taste
Procedure for Salsa verde:
- Place all ingredients in the food processor and blend thoroughly add salt to taste
Procedure for Chipotle mayo:
- In a small bowl place all ingredients and mix add salt to taste
Procedure for Mexican Street Corn:
- With a brush rub the chipotle mayo in the corn till completely cover
- Cover with the grated cotija cheese and sprinkle some chili powder
- Sprinkle tajin and garnish with cilantro
Procedure for Buffalo Street Corn:
- With a brush rub the buffalo sauce in the corn till completely cover
- Sprinkle the blue cheese crumbles and garnish with green onions
Procedure for Doritos and Salsa Verde:
- With a brush rub the mayo in the corn till completely cover
- Completely cover the corn with the Doritos crumbs.
- Add salsa verde and garnish with slice red fresnos
Procedure for Flaming hot Cheeto street corn:
- With a brush rub the mayo in the corn till completely cover
- Completely cover the corn with the Flaming hot Cheeto crumbs.
