A Grand Slam of a Meal at Spring Training: Italian Sausage with Peppers and Onion

Chef Eddie Caliendo with AZ Food Crafters cooks up Italian Sausage and Peppers perfect for celebrating the start of Spring Training in the Valley.

Ingredients

4 Italian sausage links

2 Tablespoons olive oil

1 large onion - chopped to 3/4” pieces

1T dry basil leaves

1 lb. red bell pepper - chopped to 3/4” pieces

2 teaspoons minced garlic

1 teaspoon sea salt

1/2 teaspoon black pepper

2 teaspoons granulated sugar

1 cup marinara 

 

Instructions
Cook sausage links over medium heat covered till cooked to 165* about 20 minutes, drain on paper towel lined cookie sheet or plate, wipe oil from pan with paper towels, cook onions and dry basil in olive oil 5 minutes, add peppers, cover and cook 5 minutes, add minced garlic, cover and cook 3 minutes, season, cover and cook on low till peppers are soft.

Add sausage to peppers and onion and marinara sauce, mix well, bring to a simmer, serve or cool completely and refrigerate for late use. Keeps in refrigerator 7 days.

Use to make a sandwich with melted mozzarella or chop sausage and toss with pasta.
