Chef Nikita's Salsa Verde Salmon with Avocado Relish

Salsa Verde Salmon with Avocado Relish
2 lbs. of salmon, cut into 4 portions
½ cup of prepared salsa verde, separated
2 ripe avocados, chopped
3 tbsp. of chopped cilantro
2 tbsp. of chopped red onion
Juice of one lime
1 tbsp of olive oil
½ of a jalapeno, chopped
Salt and pepper to taste
1. Preheat oven to 375 degrees. To prepare the avocado relish, mix avocado, half of salsa verde sauce, jalapeno, cilantro, onion and juice of lime. Season with salt and pepper. Make sure to taste and add more salt, pepper or lime accordingly. Depending on texture preference, you can choose to mash the avocado which will result in a smoother texture or you can leave it chunky. Place relish in fridge 20 minutes before serving. 
2. On a baking tray, place down salmon portions. Generously brush the remaining half of the salsa verde sauce on the salmon on an even layer and follow with olive oil. Season with salt and pepper. Place pan in oven for 10-15 minutes, or until salmon is flaky but moist.
3. In a serving plate, place a portion of salmon then top with relish. Enjoy!
