Pumpkin Pancake

INGREDIENTS:

1 1/2 cups milk

1 cup pumpkin puree

1 egg

2 tablespoons melted butter

2 cups all-purpose flour

3 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground allspice

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon salt

DIRECTIONS:

1. Pre-heat a large skillet or griddle to medium heat (350°).

2. Mix all ingredients together in a large bowl. Make sure not to over mix the batter, a few lumps are just fine.

3. Lightly grease the skillet or griddle and pour batter into rounds. Cook until you see bubbles forming on the surface. Flip over and let cook on other side until set.
