Mojito Poke Cupcakes
1 box white cake mix
1 cup water
3 egg whites
1/3 cup oil
Juice from 2 limes
Zest from 1 lime
1 (14 oz) can sweetened condensed milk
2-3 tablespoons white rum (or adjust according to desired taste)
1 Container butter cream or white icing.
Limes and fresh mint for garnish
Prepare cake mix according to package directions. Add juice of 2 limes, and the zest of one lime.
Once cooked, allow the cupcakes to cool for about 10 minutes. In a small bowl, whisk together the condensed milk and the rum. (Add more rum for stronger flavor.)
After 10 minutes, use a skewer to poke holes in your cupcakes. Slowly pour or brush the milk and rum mixture over the cake. Refrigerate the cake for at least 1 hour to allow the milk to be absorbed by the cake. Frost the cupcakes and garnish with lime slices, sprigs of mint and decorative sugar sprinkles.
