Fresh Corn and Mango Salsa
4 heads of corn, cooked in boiling hot water for 5-7 minutes
2 ripe mangos, chopped
1 cup of cherry tomatoes, chopped
3 tbsp. cilantro, chopped
1/4th cup red onion
½ of a jalapeno, chopped
Juice of one lime and lemon
2 tbsp. of olive oil
Salt and pepper to taste
1. Carefully cut the corn kernels off of cobs of corn into a large bowl.
2. Add the remaining ingredients to the bowl make sure to add salt and pepper to taste, and then taste for seasonings. Add more citrus juice or salt and pepper if needed.
3. Place in refrigerator for at least 30 minutes before serving and enjoy!
