1 cup fresh blackberries
1/2 cup blue cheese crumbles
1 cucumber peeled n diced
1/4 cup craisins (low sugar)
1/2 cup carrots shredded
2 green onions sliced
1/4 cup walnuts crumbled
6 cups red leaf lettuce chopped


1/4 cup EVOO
3 TBLS raspberry vinegar
1/4 cup fresh orange juice
1/2 TBLS Dijon mustard (I used stone ground)
1/2 TBLS honey
Sea salt&fresh cracked pepper to taste


In a jar with tight fitting lid combine dressing ingredients and shake to combine. On a large platter or bowl layer lettuce first. Then top with all other ingredients. Drizzle with dressing if on a platter or toss in bowl.
